Enjoy the classic PB&J flavor combo you grew up with by making a batch of this peanut butter and jelly overnight oats for a grab-and-go breakfast.
Some food combinations are just meant to be—chocolate and peanut butter, ham and cheese, chicken and waffles, bacon and…everything. Another one? Peanut butter and jelly. I’ve come to the conclusion that meals designed for kids are the best meals. Give me a PB&J with a side of carrots and applesauce, and I’m happy.
For some reason I don’t make peanut butter and jelly sandwiches very often anymore, but when I do once in a great while, the mixture of flavors always hit the spot. That’s why I was recently playing around with the classic combo for a new recipe.
I eat oatmeal most days of the week, but I usually just make my Peanut Butter Banana Oatmeal. It’s pretty simple, but for some reason, I don’t mind eating it daily. Once in awhile, though, I want something different—hence this new PB&J overnight oats recipe.
I don’t frequently make overnight oats (also known as refrigerator oatmeal), but it can be really convenient. In the past, I’ve made Banana Walnut Overnight with Cacao Nibs, Pumpkin Pie Overnight Oats, and Blueberry Coconut Overnight Oats. I usually stick to those themes when I make overnight oats, but I thought it was about time to mix things up.
This PB&J version uses a peanut butter base for the overnight oats, and the topping is more so the jelly part. I wanted to take it up a notch, and mixed in fresh diced strawberries with jelly. It turned out to be a tasty and pretty little mason jar of oats. Top with a some chopped peanuts, and you’ve got a gourmet little breakfast for two! (Or you’ve meal prepped for a couple days, which is usually how I roll with overnight oats.) Check out the recipe below.
Ingredients:
- 1 cup rolled oats
- 1/3 cup milk
- 1/4 cup plain Greek yogurt
- 4 Tbs peanut butter (crunchy or smooth)
- 2 tsp honey
- 2 tsp ground flax seed
- 1 tsp vanilla extract
- 2 Tbs jelly
- 4 strawberries, diced
- Garnish: chopped peanuts
Instructions:
- Mix the Peanut Butter Overnight Oats ingredients in a large bowl and separate into 2 smaller bowls/jars. Refrigerate overnight (or at least 4-6 hours).
- When ready to serve, combine the jelly and strawberries. Lightly mash with a fork; then top each bowl of oats with the mixture. Add the optional peanuts as your garnish. Enjoy!
Notes:
*To make this quicker when ready to serve, you can simply omit the strawberries and just scoop a tablespoon of jelly onto your overnight oats and stir it in.
