Cream Cheese Cucumber Bites with Everything Seasoning

I’m popping out of my blogging hibernation today to share a shiny new recipe! This past spring, I planted a garden that includes strawberries, green beans, green peppers, jalapeños, ghost peppers, and the star of today’s post: cucumbers! As my first in-ground veggie garden, I’m giddy with all the produce we’ve gotten so far from it, and I can’t wait to see how it grows over the rest of the summer and fall.

I chose a lot of the plants based on what I thought would be versatile. The cucumbers, specifically, I’ve already made pickles with, as well as drink concoctions like Cucumber, Lime, and Mint-Infused Water and cucumber mojitos. After perusing Instagram recently, though, I found a new idea that I thought was genius: Cream Cheese Cucumber Bites with Everything Seasoning.

While the name’s pretty long for something with only 3 ingredients, I wanted to highlight each part because they’re all equally important. These cucumber bites have a delicious balance of fresh, salty, and decadent flavors.

They make a great low-carb, healthy snack, if that’s what you’re looking for, but my main motivation for these was to use up all the cucumber I’m harvesting from the garden. Getting an extra serving of vegetables mid-afternoon is a huge bonus, so if you’re wanting to eat more veggies during the day, I encourage you to try these!

Cream Cheese Cucumber Bites with Everything Seasoning

Ingredients

  • Cucumber
  • Cream cheese
  • Everything But the Bagel Seasoning

Instructions

  • Slice the cucumber. Optional: Lay the slices on a clean towel or paper towel to absorb extra moisture.
  • Spread a thin layer of cream cheese on each slice.
  • Lightly sprinkle the Everything Seasoning across the tops of each cucumber bite.

The measurements for this recipe are very much to-taste, so you can put as much or as little cream cheese and seasoning as your heart desires. I will say, though, that a little bit goes a long way, and after eating several slices loaded with cream cheese and Everything But the Bagel Seasoning… it can easily overload your taste buds. As someone obsessed with cream cheese, I may or may not have learned that the hard way.
