Why do salads always taste better when someone else makes them?! While I don’t always like to order salads at restaurants, there are some that just sound too good not to get every once in awhile—like Caesar salads, steak and arugula salads (I’ve only had this like twice in my life, but it’s a memorable combo), and anything that has goat cheese, candied walnuts, and fresh fruit.
The only salads that I think are just as good as the drool-worthy salads from some restaurants are the ones I’ve shared on this blog. (I’m not going to share a salad recipe if I’m not legitimately excited to eat it.) Some of my favorites have been my Berry & Walnut Chicken Salad with Poppy Seed Dressing and my Pear, Bacon, Goat Cheese Salad with a Maple Balsamic Vinaigrette. This new one, however, I’ve been eating a lot this past week and really loving.
This is a Greek-inspired salad with colorful toppings on a bed of crunchy romaine. I’ve never really thought to make a salad with a “Greek” vibe before, probably because olives and onions are usually involved, and I’m not a fan of either. But when I realized I had all the ingredients of this salad already? I was excited about the possibilities.
(I actually didn’t even mean for this to become an official recipe. These pics were taken on my phone for an IG post, but upon realizing how good it was, I had to turn it into a recipe on here.)
I ended up using a local Basil Lemon Dressing that I’m all about lately (featured in my April 2019 Favorites post), but I’m pairing the recipe with my Olive Oil & Vinegar Dressing. It’s a simple vinaigrette recipe that is really all you need for this.
Greek Romaine Salad
Ingredients
- About 3 cups Romaine lettuce
- 1/4 cup Chickpeas (canned, rinsed and drained)
- 1/4 cup Halved cucumber slices
- 1/4 cup Diced carrots
- 5-10 Grape tomatoes, halved
- Feta crumbles
- Olive Oil & Vinegar Dressing link in notes
Instructions
- Assemble salad by laying lettuce down in a large bowl. Add remaining ingredients on top.
- Drizzle dressing over the top and enjoy!

And while the salad looks pretty with its neat rows of colorful ingredients, I most definitely dumped this into a large bowl with a lid after taking the pics. That way I could shake it up and not make a huge mess. All for the IG, though, am I right?
