For an easy weeknight meal, make this roasted sausage and vegetable mixture that can be thrown together last minute for a delicious and healthy dinner.
This is one of our go-to dinner meals when we either don’t know what to cook, don’t have much time to prepare anything, or don’t have the motivation to do much work. You’ve probably seen versions of this before, and if you haven’t, you’re welcome. 😉
Sheet pan sausage and veggies is seriously so easy, and I’m not just saying that. I used to make this meal frequently when Matt and I would leave after work immediately to go workout at a nearby track. By the time we’d get home, it was somewhat late and we were starving. So I’d chop whatever veggies we had on hand, cut up a kielbasa sausage (which I try to keep on hand because it’s such a quick add-in), and then throw this in the oven to bake as we cleaned up.
As long as you have some veggies stocked (plus sausage), this is such a simple dinner you can make when you’re out of ideas or time.
I make this with different ingredients pretty much every time, but I always have a chopped-up potato and a kielbasa. The rest of the veggies are whatever we have in the fridge at that given time (because I rarely actually meal plan for this).
The one thing you need to make sure of, is that your vegetables are chopped to a similar size. That way, they’ll cook at a similar rate (and you don’t end up with burnt broccoli and hard potatoes).
Also? I rarely even season this. Since it’s all mixed up before baking, the different flavors (especially the sausage) mingle with each other a bit, creating a nice depth of flavor with minimal effort.
Ingredients:
- 2 cups broccoli florets
- 8 oz green beans
- 1 large potato (e.g., Yukon or Russet)
- 13 oz smoked turkey kielbasa, cut into 1-inch pieces
- 2 Tbs olive oil
- Salt and pepper to taste
- Optional: sprinkle your favorite seasoning blend
- Garnish with fresh herbs, like parsley
Instructions:
- Preheat oven to 400 degrees.Cover a large baking sheet with aluminum foil and spray with non-stick spray.
- Add the broccoli, green beans, potato, and kielbasa to the prepared pan.
- Drizzle olive oil over the top along with desired seasonings; toss the ingredients to evenly coat. Spread the veggies and sausage across the pan to be a single layer.
- Bake for about 20 to 30 minutes (until a fork can easily pierce one of the larger veggie pieces). Remove from oven.
- Garnish with fresh herbs; serve.
If I think ahead and make enough of this for leftovers, it makes for the PERFECT dish to food prep if you need some pre-made meals for the next few days. I can’t stress enough how easy this is. That’s half of why I love it so much.
Customize it to your heart’s content—sweet potatoes instead of white, add Brussels sprouts, include mushrooms, chop up some carrots…just use whatever you prefer or simply have on hand. Enjoy!
