Omelet in a Mug

For a gourmet breakfast that’s quick to throw together, microwave eggs and all your favorite fixings in a mug for a tasty and easy omelet.

I’m not usually a big omelet person, but once in awhile, random ingredients stuffed inside a blanket of eggs just sounds so right.

Now, if you’re like me, making omelets at home is always a gamble. Am I going to end up with a pretty, intact omelet? Or am I going to mess it up…err…”change my mind” and end up with a scramble of sorts? Thankfully, it tastes good either way.

When it comes to omelets, there are so many possibilities. I usually like a blend of meat, cheese, and veggies. It’s fun to see what sorts of concoctions different eateries come up with though. (Anytime goat cheese is involved, I can’t not pick it.)

If you’re in the mood to whip up your own omelet at home, and want a fail-proof way cook it, I highly recommend the microwave method.

All you need is a mug, a fork, and the ingredients you want, which makes this really great if you don’t have access to a stove. (I’ve brought a couple eggs to work before and microwaved them to add to a cheesy breakfast sandwich; worked like a charm.)

The concept of making an omelet in a mug is pretty straightforward, but if you don’t cook it properly, you can end up with either under-cooked eggs or an explosion of egg pieces (I’ve done both…).

The process I’ve found to work the best is to microwave the mixture for about 1 1/2 to 2 minutes, stirring halfway through. And as long as you coat the mug with non-stick spray, the eggs come right out (I used to not, which made the mug a pain to clean).

Yield: 1 Serving

Omelet in a Mug

Ingredients:

  • 2 large eggs
  • 1 Tbs shredded cheddar
  • 1 Tbs chopped spinach
  • 1 bacon strip, crumbled

Instructions:

  1. Spray a mug (about 14 to 16 oz.) with non-stick spray. Add eggs and scramble. Stir in all add-ins.
  2. Microwave for 60 seconds. Stir.
  3. Microwave for another 30 to 60 seconds, or until the egg is fully cooked.

If you’d rather cook several little omelets at once, I shared a recipe for Cheesy Ham and Egg Cups awhile ago that involves baking the egg mixture in a muffin tin. It’s also pretty effortless, but works great for meal prepping.
