I made good food last night! And I quote, “These meatballs are amazing!” My father knows exactly what to say to make me smile.
In search for a recipe using ground beef last night, I settled on meatballs. The only part of the recipe I cared about was the use of ketchup. Ketchup makes meatloaf and meatballs better. In fact, these Savory Meatballs reminded me of mini meatloaves. They were really good!

Meatballs:
1lb ground beef
1/2 c quick oats
3/4 c milk
2 t onion powder
1/2 t garlic powder
1 t salt
1 t black pepper
3 T canola oil
2/3 c flour
Sauce:
1 c ketchup
2 t onion powder
2 T distilled white vinegar
2 T brown sugar
2 T Worcestershire sauce
1 1/2 t of hot sauce
1. Mix beef and oats. Add milk and then seasonings. Let cool in fridge for
at least 30 minutes to firm.
2. Preheat oven to 350 degrees.
3. Heat oil in skillet over medium heat. Dredge meatballs in flour and brown. Place them in 8×8 baking dish.
4. Sauce: mix ingredients and drizzle evenly over meatballs. Bake 45 minutes.
The recipe made 16 large Savory Meatballs for me and fit perfectly in an 8×8 pan. They went well with some baked potatoes leftover from this past weekend. Eight more to go!
