38 Baked Potatoes for Halloween

Ran 8 mi/1:10 – 8.75/mile, baby! I’m pleased.

By the time I got to 8 miles, I felt like I should just keep running to reach 15 miles (my goal long run distance for this week). I have a decent amount to do today though so that didn’t happen. I often think about keeping going because I’m much more positive at the end of my 8-mile runs than when I reach 8 miles in my long runs. Having the choice to either stop or keep going is nice and makes me more optimistic. Whereas, starting a run with the goal of it being my long run is a bit more intimidating. Perhaps next week I’ll take advantage of the choice.

Until then, I must share about my wonderful Halloween-esque weekend!

The Weekend

…was Halloween! For me at least. My sister and bro-in-law threw a Halloween party, and it was quite enjoyable. I dressed up as Ariel, and my sis and friends dressed as other princesses! It was precious, as you can see.

As for the food, my sister did an amazing job of providing plenty for the 20 or so people that were there. The main dish was baked potatoes with chili or broccoli cheese soup on top. It was tasty and worked well for the masses. I, the genius that I am, made 38 baked potatoes. I wanted to make sure there were enough for everyone. Well there definitely was enough for everyone…and their brother…and possibly sister too. So, Ash and I both have an overwhelming amount of potatoes to consume / eventually waste.

It’s all good. I only brought 10 home (2 are gone in the pic), and my sis has at least 15. Unless she gets really creative, she’ll be the one feeling guilty from wasting an excessive amount of potatoes—then again, it was my fault. Okay, so enough about potatoes.

My sister made a combination of a few pumpkin dips, and I am going to share the goodness with you…

Pumpkin Cream Cheese Dip

(Adapted from this recipe.)

Pumpkin Cream Cheese Dip

Pumpkin Cream Cheese Dip

Pumpkin Cream Cheese Dip has a subtle pumpkin flavor that does not overpower. It's a sweet dip that works especially well as a fall appetizer.

Ingredients:

  • 1 1/2 16-oz containers Cool Whip
  • 1 (5-oz) pkg instant vanilla pudding mix
  • 6 oz low-fat cream cheese, softened
  • 1 (15-oz) can pumpkin
  • 2 t cinnamon

Instructions:

  1. Mix together all ingredients in a large bowl. (An electric mixer really helps.) Sprinkle top with extra cinnamon if desired and serve with apples, Nilla wafers, or whatever your heart desires.

The picture is about 1/3 of the total amount, so it makes for a good amount for large gatherings. Leftovers are always good too though. Smile
