For a filling and tasty snack option, try this chia seed pudding recipe full of strawberry and vanilla flavors that’s easy to prepare ahead of time for a quick treat!
So this one time, I bought a 2-pound bag of chia seeds off Amazon. I don’t exactly use chia seeds on a regular basis, so as you can imagine…I’m nearing the expiration date and still have far too much of the bag left. Cue chia seed pudding.
I first tried this phenomenon about 4 years ago. And although I’ve made several batches of it, the concept of chia pudding is still so cool to me. If you’ve never made the dish before, you soak chia seeds in milk (dairy or not), incorporate the desired add-ins, and wait until the chia seeds have absorbed the liquid. Then they swell up creating a globby pudding consistency (yum, right?). It reminds me a lot of tapioca pudding, which is why I really like it.ย I’m a texture person, and the little beads of chia burst in your mouth.
Chia seeds are actually considered a “superfood” by many people, because they’re full of great nutrients. More specifically, they contain omega-3 fatty acids, antioxidants, fiber, iron, and calcium.
In the past, I haven’t played around with different flavors much, usually sticking to my Cocoa Banana Chia Pudding recipe. But in an effort to start using up the excessive amount of chia seeds I still have…I did some experimenting this past week.

I had some strawberries on hand (which also just happen to be coming intoย season for spring), so I decided to try a vanilla-strawberry mix for a simple yet tasty pudding. I really had to fight the urge to throw in chocolate chips, because my sweet tooth has been intense the past few days. Happy to report I successfully persevered and stuck with a pretty basic flavor combo that I though was surprisingly goodโhence the recipe!
Ingredients:
- 1 cup unsweetened almond milk
- 3/4 cup chopped strawberries
- 1 Tbs maple syrup
- 2 tsp vanilla extract
- 1 Tbs vanilla protein powder
- 1/4 cup chia seeds
Instructions:
- Blend milk, strawberries, maple syrup, vanilla, and protein powder in a blender until smooth. Pour into container and stir in chia seeds.
- Refrigerate for for at least an hour, or overnight.

We do chia puddinngs a lot. My favourite thing to add to strawberries would be cocoa powder or chocolate chips. The base can be either almond or also coconut milk. Thereโs just something about the blend of chocolate and strawberries. Chocolate covered strawberries anyone?
