The first time I made a German pancake, my mind was blown. I had never seen one in person before, but its unique look intrigued me enough to try it. Instead of cooking on the stovetop, like with traditional pancakes, you bake this version. Not just that, instead of making one uniform pancake, a German pancake rises all around the sides to create a popover effect.
In addition to being the perfect bed for a mountain of fresh fruit and syrup, I really enjoy how different German pancakes taste compared to the usual pancake recipes most of us make. Instead of the fluffy pancakes I’m used to, German pancakes seem to be the love child of a pancake and an omelet. They’re more dense on the bottom and moist, and they have a stronger egg flavor. I think they’re a great way to mix things up if you want to make a gourmet breakfast but don’t want to stand over the stove for so long.
This German pancake is significantly less work than regular pancakes because you mix up the ingredients and let it do its thing in the oven while you enjoy a cup of freshly brewed coffee. Mmmm. Plus, I think this looks fancy because I don’t know about you, but I don’t ever have popover-type foods. So this is always a welcome dish for weekend mornings (and great leftover, too!).

German Pancake
Ingredients
- 2 Tbs unsalted butter
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 3 large eggs
- 1 tsp granulated sugar
- 1/2 tsp vanilla extract
- 1/8 tsp salt
Instructions
- Preheat oven to 425 degrees. Place an 8×8 baking dish inside with the butter; remove once the butter is melted.
- In a medium bowl, whisk together the flour, milk, eggs, sugar, vanilla, and salt until most of the lumps are gone.
- Make sure the butter has coated the bottom of the baking dish, then pour in the pancake mixture.
- Bake for about 20 minutes, or until golden brown and fluffy.
- Add toppings like powdered sugar, maple syrup, and fresh fruit when ready to serve.
