Satisfy your sweet tooth with this homemade chocolate bark that gets a boost of antioxidants from dark chocolate and healthy fats from almonds and pepitas.
Do you like to buy desserts to keep in the house? It just occurred to me that I NEVER do. And when I say “never” I mean…I honestly cannot remember the last time I purchased a sweet from the store. However, I always have ingredients toย make desserts.
I really like this system because it makes eating sugar less convenient, which helps prevent me from overdoing it. Instead, I make a treat from scratch once in awhile, and not only is it more satisfying but it’s customizable (so I can add ingredients to give it more nutritious value…or not, ๐ depends on my mood).
One of these desserts that I like to make is myย Dark Chocolate Peanut Butter Cupsโthey only have three ingredients and are delicious AF, in my opinion. A similar dessert that I make once in a great, great while is chocolate bark.
This is one of those foods that I never had to “learn” how to make. It was just obvious in my mind. I had seen pictures of chocolate bark (probably on Pinterest), which made the idea pop in my head one time. So I melted some chocolate, threw some nuts and dried fruit on top, and then chilled it until it was solidified.
This recipe is easy to change based on what you have in the pantry or whatever you’re craving in a given moment. I like the combo of colors and flavors with using almonds, pepitas, coconut, and dried cranberries. Whatever works!
Ingredients:
- 1 cup dark chocolate chips
- 1/2 cup toppings (dried fruit, nuts, etc.)
Instructions:
- Add chocolate to a microwaveable bowl. Microwave for 30 seconds, then stir. Continue microwaving until melted, stirring every 15 minutes until smooth.
- Pour melted chocolate onto wax paper, and spread into a thin later.
- Sprinkle desired toppings across the melted chocolate. Freeze for at least 10 minutes, or until the chocolate has solidified.
- Break chocolate into smaller pieces.
- Store in the fridge.
