Before I get into our adventures from Halloween, here’s a quick look at today’s workout:
I ran 8 miles in 1:10 – AKA 8:45/mile, baby! I’m quite pleased with myself. By the time I got to those 8 miles, I felt like I should just keep running to reach 15 (my goal long run distance for this week). I have a decent amount to do today, though, so that didn’t happen. I often think about keeping going because I’m much more positive at the end of my 8-mile runs than when I reach 8 miles in my long runs. Having the choice to either stop or keep going is nice and makes me more optimistic. Whereas, starting a run with the goal of it being my long run is a bit more intimidating.
Now let’s get to the festivities: This past weekend was Halloween! …for me at least. My sister and bro-in-law threw a Halloween party for our friends, and it was perfection. I dressed up as Ariel, and my sister and a few friends dressed as some other princesses. It was pretty precious, as you can see.
As for the food, my sister did an amazing job of providing plenty for the 20 or so people that were there. The main dish was baked potatoes with chili or broccoli cheese soup on top. It was delish and worked well for the masses.
I, the genius that I am, made 38 baked potatoes—because you know, I wanted to make sure there was enough food for everyone. Well there definitely was enough for everyone…and their brother…and possibly sister too. So, Ash and I both have an overwhelming amount of potatoes to consume for the next week.
I only brought 10 potatoes home; meanwhile, my sister has at least 15. So uh…let’s hope we both can get creative with ways to use them up, because we’re both going to be pretty potato-ed out for awhile.
In addition to making potatoes for days, we also made a combination of a few pumpkin dips that turned into this glorious bowl of Pumpkin Cream Cheese Dip heaven.
The recipe makes a decent amount, but it goes pretty fast!! Worse comes to worse, you have leftovers. And let me tell you, that is in no way a problem. 😉

Aww thanks!!! I used purple bowls for shells and got a few weird looks, but it got the job done.
