Chocolate Peanut Butter Banana Sandwiches

Make these Chocolate and Peanut Butter Banana Sandwiches for a quick bite-sized treat.

Pretty sure I could write a book about 1,000 ways to use chocolate chips. They’re my go-to ingredient for making desserts that do double-duty as a healthy snack, as well. Such is this case with today’s recipe.

Chocolate and peanut butter just make magic when combined. From
Apple Nachos and Dark Chocolate Peanut Butter Dip to Dark Chocolate Bark and Dark Chocolate Peanut Butter Cups—the possibilities seem endless. This recipe uses those two ingredients, plus banana slices to make a surprisingly delicious bite-sized snack.

You could just coat banana slices in chocolate, but I wanted to go the extra step of making them into peanut butter sandwiches. After they’re coated in chocolate, just sprinkle some chopped peanuts on top, and you’ve got a pretty little dessert!

These are great to just keep in the fridge if you want a quick little snack to satisfy your sweet tooth during the day. I’ve also tried freezing these, but they’re [obviously] pretty hard when frozen solid, so I’d always have to wait for them to thaw before eating. If you want to discourage yourself from popping them in your mouth one by one all day, freezing could definitely help, though!

These would also make a nice treat to serve at a gathering, but keep in mind that if they’re left out too long, the chocolate may be a bit messy as it softens at room temperature.

Chocolate Peanut Butter Banana Sandwiches

Ingredients

  • 1 banana cut into slices
  • 1/4 cup smooth peanut butter
  • 1/2 cup chocolate chips melted
  • 1 tsp coconut oil
  • Optional: chopped peanuts for a topping

Instructions

  • Spread a small amount of peanut butter between 2 banana slices. Repeat until there are no slices left. Refrigerate for about 15 minutes to help the peanut butter solidify more. This makes the sandwiches easier to work with.
  • Line a plate or serving board with parchment paper. Set aside
  • In a small microwaveable bowl, add the chocolate chips and coconut oil. Heat for 30 seconds, stir. Heat again at 15-second bursts until melted and smooth.
  • Using a fork, scoop each banana sandwich one at a time into the chocolate mixture, turning until fully coated. Lift and let the excess chocolate run off. Set on parchment paper. Repeat this with every sandwich. Then refrigerate for about 30 minutes.
  • Enjoy cold and keep leftovers in the fridge.
