Buffalo Chicken Lettuce Wraps

Toss shredded chicken in buffalo sauce and add it to lettuce wraps along with carrots, celery, feta, and a drizzle of ranch for a flavorful and fresh meal.

Buffalo Chicken Lettuce Wraps

This is one of those recipes I’ve considered sharing for years but just never have. I’m trying to post more of those, actually, because some people’s casual, go-to recipes are exciting new ideas for others stumped at mealtime.

We’ve had leftover Frank’s buffalo sauce ever since I made my Buffalo Chicken Meatballs recipe a couple months ago. This lettuce wrap situation seemed like a great use for it. Plus, if I prepare anything with buffalo sauce, it’s pretty much a guarantee that Matt will like it. Win win!

Buffalo Chicken for Lettuce Wraps

There are a variety of ways to make this sort of lettuce wrap, but I’m taking the lazy route here by just using leftover shredded chicken. I often cook several chicken breasts at the start of the week (pro tip: broiled chicken is an easy prep method) just so dinner is a lot faster on busy days.

So for this recipeโ€”which serves about 2-3 peopleโ€”all you need to do is toss a large chicken breast’s worth of cooked meat with a little bit of buffalo sauce, and throw it in a lettuce wrap with some freshness. More specifically, I like fine pieces of celery and carrot in here because the crisp veggies go so well with buffalo sauce.

I chose to use feta and ranch, but if you’re a blue cheese fan, using that dressing and some crumbles would work well too.

Buffalo Chicken Lettuce Wraps

Yield: 2-3 servings

Serving Size: 1-2 lettuce wraps

Buffalo Chicken Lettuce Wraps

Ingredients:

  • 1 boneless, skinless chicken breast, cooked and shredded
  • 1/3 cup buffalo sauce
  • 4 large lettuce leaves (iceberg, butter, romaine, etc.)
  • 1 large carrot, peeled and grated
  • 1 celery stalk, finely diced
  • 2 Tbs feta cheese
  • 2 Tbs ranch dressing

Instructions:

  1. In a medium bowl, mix together the shredded chicken and buffalo sauce. Add 1/4th of the chicken mixture into each lettuce leaf.
  2. Divide the grated carrots and diced celery among the lettuce wraps, and top with feta and ranch.
