I totally just winged a pancake recipe, and for once it turned out! ‘Twas a nice change of pace. I love pancakes, but I feel guilty having the regular kind too often because they’re not the healthiest of breakfast choices. Oatmeal is usually my breakfast of choice so I combined the two for a healthy and simple protein-packed breakfast.
Protein Oat Pancake
1/2 c oats
1/2 banana, mashed
1. Mix all ingredients.
2. Spray skillet with non-stick cooking spray. Turn heat to medium-low and spread mixture onto surface, spreading until about half-inch thickness.
3. Cook until pancake has turned golden brown and flip.
Makes 1-2 pancakes. I topped mine with banana, peanut butter, and cinnamon, but do whatever your heart desires.
Basically, this recipe is a pancake and oatmeal’s healthy love child.
