Happy Belated Easter! And Happy April Fool’s Day! I hate this day. Why? Because I’m basically just super paranoid. Matt likes to mess with people, so on this day, I will not trust him the least bit—hence the title of this post.
Anywho…
It is officially April, and that is awesome. I like starting new months. Seems like new and exciting things are going to happen, whether that’s actually true or not.
Workout
Not even going to pretend like I have a plan on this one. Today is probably going to be a speedy run of some sort on zee treadmill after work.
That would be after my trip to Target though. Got’ta scope out that Easter candy on sale I was talking about! I was informed that I’m not allowed to come home without Starburst Jellybeans. Boyfriend’s intense about his love for specific types of candy.
Speaking of deliciousness…
Easter Weekend Recap
Yesterday was spent with a few friends, chillaxing and eating.
Here’s some of the goodness we made…
- Vanilla cupcakes (using this recipe – aka the same one I used as a base for Matt’s Oreo birthday cake) with colorful frosting
- Fruit salad (mangoes, strawberries, apples, and grapes = the bomb)
- Scalloped potatoes in the crockpot (using this recipe, plus some bacon and a bit more seasoning)
- Cinnamon-sugar-glazed ham
- Green bean casserole (not pictured; green beans = best vegetable ever)
(By the way, if you’re making a fruit salad, I highly recommend coating it in some sort of citrus, clear pop. I chose Fresca, but Sierra Mist or whatever else works too. It prevents the fruit from oxidizing and getting brown fast. Plus, it makes a delicious fruity juice when the salad is all gone.)
And that was our Easter linner/lupper/late lunch/early dinner. ‘Twas quite a tasty one!
Back-back-backin’ it up to Saturday…
We enjoyed another $6 movie in the a.m. Since Matt agreed to go see Oz last weekend, I agreed to see Olympus Has Fallen with him. It was quite violent and intense, but I actually enjoyed it for the most part. Not something I’d pick to go see, but I liked it.
On Friday I discovered something very exciting…
Remember that one time I talked about filling out the survey on a Which Wich receipt to get a free cookie with your next purchase? Well, I discovered Subway does the same awesome thing. You better believe I’m getting a chocolate chip cookie the next time I go to that Subway. Best. Cookies. Ever. Seriously, they’re my favorite.
P.S. I’ve got a giveaway coming this week, so stay tuned!!
Questions for you:
Pop or soda? I grew up saying pop, but I think soda is more fun, so I usually say that now.
What did you do/eat on Easter? Did you decorate eggs? If so, I’m jealous.
Playing any tricks on anyone today? If I had more time to plan, maybe. Instead, I’ll be living in fear.
What’s something you’re looking forward to in April? Matt has a huge relay race with coworkers coming up in a couple weeks, so we’ll be flying to Vegas! Pretty excited for that one.

I’ve never thought of putting fresca on my fruit salads. Greta idea!
Katie says
Yes, you must try it! It’s crazy how well it works. It only adds to the fruit flavor.
Sarah @Pickyrunner says
Subway cookies are SO good.My friend tried to prank me this morning by telling me he needed a ride to school but I caught myself before it was too late. I hate april fools day!
Katie says
Nice job catching onto the prank! I’ve been prank-free so far. Keeping my fingers crossed it stays that way!
Pam says
I call it pop, but Alex calls it soda so I’ve kind of picked up soda.
