Enjoy a piña colada in popsicle form with this frozen treat blending pineapple and coconut flavors.
One of my favorite ways to cool down from hot weather is….air conditioning. (Just being honest.) Another way? Popsicles! And since frozen alcoholic beverages are also super refreshing, I thought it was time for another boozy popsicle recipe.
You really don’t even need rum in this, if you want a more family-friendly popsicle recipe. I enjoy the little touch of rum flavor, though, so follow your heart!
Since these popsicles are mostly just blended fruit, they’re basically just a frozen smoothie. I like how simple they are because of that, and the coconut milk adds a nice creaminess that makes them seem extra indulgent.
Ingredients:
- 1 cup pineapple chunks
- 1 cup coconut milk (full or low fat)
- 1 medium ripe banana
- 1 tsp lime juice
- 2 Tbs white rum
- Garnish: shredded coconut
Instructions:
- Add all ingredients to a blender, and blend until smooth. Pour into popsicle molds.
- Freeze for about 20-30 minutes, and insert popsicles sticks into the center of each mold. Continue freezing for at least 4-6 hours, or until frozen solid.
- Before serving, remove the popsicles from the molds and sprinkle them with coconut.
Depending on how much pineapple fits in 1 cup for you, there might be more mix than will fit into your molds. I’d prefer to have too much than too little, so if you DO have too much? You get to just drink a mini piña colada. You’re welcome. 😉
