I’ve been busy creating things today!
For breakfast I made some cottage cheese pancakes, and soon after, I did an interval treadmill run. I’ve got a horrible picture, recipe, and workout for you! Please try to contain your excitement. This also means I actually have content to add to my Fitness and Recipe pages. Aw yeah–blog’s gettin’ legit.
First off: Cottage Cheese Pancakes
(Adapted from the this cottage cheese pancakes recipe.)
Ingredients:
1 cup rolled ats
1/2 cup cottage cheese
4 large eggs
2 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp nutmeg
Directions: Blend all ingredients and then carry on with your pancake-making skills.
I topped mine off with peanut butter, bananas, a few sprinkles of cinnamon, and a drizzle of honey. Yum! (The picture isn’t exactly the prettiest.) These pancakes are super filling, thanks to all the protein.
In my recent Weird Foods You Need to Try post, I mentioned how these pancakes are very dense and to not expect the fluffiness of normal pancakes. They’re definitely different, but I think they’re still really good, especially with peanut butter and bananas!
Next creation…
I love running intervals on the treadmill. Most of the runs I do on the treadmill jump all over, keeping my heart rate way up. This workout did just that. It took me 3.03 miles, and I was quite sweaty afterwards. Success! For some reason today, my energy levels are to the sky. After the workout I did two 60 second planks and did a bunch of cleaning.
The rest of the day is going to be pretty chill. Hopefully the night brings some Friday fun! I’m in California right now and will be headed back to Illinois on Sunday. So, I can’t decide whether to be really sad to leave my boyfriend Matt or to be excited to see all my family at home. Right now I’m pretty leveled out and am just trying to focus on the excitement. Oh, bittersweet life events.
