Creative Ways to Remake Thanksgiving Leftovers

Hope you all had a great Thanksgiving! Before I get into the Thanksgiving talk, here’s what today’s workout looks like:

Workout

Since I didn’t do my long run on Wednesday, I’m hoping to do  it today. It’s apparently supposed to be like 30 degrees all day and super windy, so I’m not looking forward to that. I suppose it’s an excuse to wear my new workout clothes in action though. If anything I suppose I could fit it in tomorrow since it won’t be nearly as windy. Cold weather plus wind? Not my favorite.

Once I finish, though, it’ll feel good (at least for my mind) to get in a good run after such food-tastic days.

Looking Back on Thanksgiving and Looking Forward to Thanksgiving

Well, my Thanksgiving was lovely, and I’m going to experience it all over again tomorrow. We visited my grandparents yesterday. Saturday, we’re having my sis and bro-in-law, Ashley and John, over to do the meal all over again. Only this time I get to cook all day, so I’m excited.

Like I’ve said before, making all the food is probably my favorite part of Thanksgiving. That plus seeing my favorite siblings? That’s my idea of a good time.

After having two legit Thanksgiving dinners, I know I’m going to get sick of the leftover food really fast. I don’t know about your families, but we usually have a decent amount of food that’s leftover to deal with. Instead of having the same thing everyday for like a week, I’ve found some creative ways to remake Thanksgiving leftovers.

I’ve been surfing the internet looking for ideas, so I can’t promise if these recipes are hits or misses. If anything, they’re a good place to start and give you some ideas of what to do with some popular Thanksgiving dish leftovers. Hope you find them useful!

  • Turkey

Cream of Turkey & Wild Rice Soup (Can’t go wrong with that!)

Next Day Turkey Soup

Turkey and Spinach Wraps with Cranberry Walnut Cream Cheese Spread

Turkey Hash

Turkey Manhattans (A bit of carb heaven.)

Turkey Parmesan

Turkey Pot Pie (Could always just cover the top with crust instead to make it healthier.)

Turkey Tetrazzini

  • Cranberry Sauce

Bruschetta (Sounds better than traditional bruschetta to me!)

Chicken with Balsamic Cranberry Sauce

Cranberry Barbecue Sauce (Perhaps mixed with shredded turkey on a sandwich?)

Cranberry Pork Chops

Grilled Brie and Cranberry Sandwich (Brie = yes)

Thumbprint Cookies (I thought this was a pretty awesome use.)

  • Stuffing/Dressing

Stuffing Frittata (I’ve never made a frittata, but I’m intrigued.)

Stuffing Meatloaf with Marmalade Glaze

Leftover Stuffing Balls (Quick and simple!)

Leftover Stuffing Quiche

Turkey Vegetable Soup with Dumplings (Not usually a big fan of dumplings but yum.)

  • Mashed Potatoes

Gnocchi

Leftover Mashed Potato Soup (Chunk-less potato soup! Why not?)

Mashed Potato Cakes (I’ve had a version of these before, and I’d recommend them)

Mashed Potato Dumplings

Salmon Croquettes (Yay Omega-3’s!)

  • Green Bean Casserole

Green Bean Casserole Cups (Not the healthiest, but it’s an idea.)

Green Bean Casserole Pasta

Green Bean Stuffed Portobellos Recipe (THIS, however, is healthier)

Leftover Mini Green Bean Casserole Frittatas

  • A Little Bit of Everything

Thanksgiving Leftover Macaroni & Cheese (Mac ‘n’ cheese: the ultimate comfort food.)

Thanksgiving Leftovers Club Sandwich (The first picture. It’s ridiculous/awesome to me.)

Turkey & Cranberry Quesadillas (Anything in a tortilla is suddenly better in my opinion.)

Turkey, Cranberry, & Pesto Pizza (Such a creative idea!)

Turkey Salad with Cranberry Dressing

Leftover Turkey and Stuffing Casserole
