Green Beans Almondine

Green Beans Almondine is healthy side dish that includes crisp-tender green beans cooked in a sauce of butter, olive oil, and lemon—with toasted almonds and garlic mixed in.

I’ll eat green beans any way they’re prepared, but this fancy-sounding “almondine” version has become a favorite of mine over the years. I had actually never heard of this dish until we were picking the menu for our wedding reception.

When I looked up what Green Beans Almondine was, I was so excited, because 1. it was a light side dish with green beans as the star and 2. this is a dish my dad had made me (more or less) in the past. So I already knew I liked it and what to expect.

Apparently Green Beans Almondine is a classic French dish. It sounds and looks impressive, but making it is actually a breeze.

You can cook the green beans a variety of ways, but I decided to just boil them while I toasted the almonds (and garlic) in the butter-olive oil mixture. Before it’s ready to serve, you add the beans to the skillet and add a generous squeeze of lemon juice, which really takes the dish to the next level.

I think green beans are the perfect veggie side dish. And with this recipe, you can prepare a flavorful menu item with great texture from the crispy green beans and crunchy sliced almonds.

Green Beans Almondine

Servings 4 servings

Ingredients

  • 1 lb. fresh green beans, trimmed and wished
  • 2 Tbs butter
  • 2 Tbs olive oil
  • 1 clove garlic, minced
  • 1/3 cup sliced almonds
  • 1 Tbs fresh lemon juice
  • Salt and pepper to taste

Instructions

  • Bring a saucepan of water to a boil. Add the green beans, and cook until they start to become tender but are still slightly crispy. Drain and rinse with cold water.
  • In a large skillet, heat butter and olive oil over medium heat. Add garlic and sliced almonds. Cook until the garlic and almonds begin to brown.
  • Pat the green beans slightly dry. Pour the green beans into the skillet with the almonds and garlic. Cook for a couple minutes until warm, stirring occasionally. Add lemon juice and add salt and pepper to taste.
