For a sweet and healthy snack, make a batch of these roasted almonds coated in cocoa powder.
I’m starting to think I should just turn this blog into a snack-focused food blog, because that’s basically what’s going on already.
I’ve gotten really into flavored nuts and seeds, because they satisfy my cravings for sweet (or salty) but are full of healthy fats and other goodness. My latest creation is this cocoa roasted almond mixture.
When I was looking around for recipe inspiration, I liked the simplicity of this process. All you do is roast raw almonds in the oven for about 10 minutes, then coat them in honey before tossing them in powdered chocolately goodness.
They’re very easy to make, and the recipe doesn’t call for many ingredients. But they’re surprisingly delicious, in my opinion. They’re not overly sweet, but they still satisfy my sweet tooth in a healthier way, which is something I’m always searching for mid-afternoon.
Cocoa Roasted Almonds
Ingredients
- 2 cups raw almonds
- 1 Tbs pure honey
- 3 Tbs unsweetened cocoa powder
- 1/4 tsp sea salt
Instructions
- Bake at 350 for 10-12 minutes, stirring half way through to ensure even cooking. Let cool for about 2-3 minutes.
- Pour into a bowl and mix with honey. Add cocoa powder and salt, stirring to coat.
- Pour back onto baking sheet to continue cooling completely.
Snacks like these almonds or maybe my Spicy Roasted Pepitas are a great option to have on hand. I always forget when I’ve made these, though, because they’re a new kind of snack for me. So when I’m searching around for something quick, I get excited to find these perfectly coated, tasty almonds. Hope you like them!
