Breakfast food is the best food — morning or night. That is just a fact. Ish. I’m pretty much always down for breakfast foods, be it pancakes, eggs, breakfast burrito, or today’s recipe. Unfortunately, when I make brinner a lot of the time, it’s typically pancakes topped with sugary syrup — aka not the most nutritious. When I saw this idea, Iย was excited and had to try it out.
This waffle recipe has a similar texture to the traditional breakfast dish, but there’s no sugar or empty carbs. If you want some protein with a side of more protein, that’s what this is all about. Two ingredients — one super easy, super fast dish.
Ingredients:
- 1 scoop protein powder (any flavor)
- 2 eggs
Instructions:
- Mix ingredients together with a fork or whisk.
- Pour on waffle iron that has been coated with non-stick cooking spray.
- Cook until done, usually a few minutes.
- Serve with desired toppings.
I used chocolate protein powder, but I’m interested in playing around with different flavors. You can throw in some cinnamon or maybe some fruit. Whatever you want. I topped my waffle with some coconut butter and peanut butter. I like butters.
The waffle itself isn’t packed with a lot of flavor, depending on what protein powder you use, but the fact that this has two simple ingredients makes it that much better. This would also be an easy snack to keep on hand, maybe even in the freezer so you could throw it in the toaster and go.
Waffles with a bit more nutritious value. Boom.

This sounds interesting, and quite easy to make. Can this be used for pancakes, or are the proportions made just for waffle irons?
