A Few of My Favorite Things

Monday: Core & Legs Circuit and a 2-minute and 25-second plank for my plank challenge

Tuesday: Since I’m running a 5k soon, I figured I’d see how fast I could 3.1 miles. I ran it in 26:38 for an average pace of 8:35. I did much better than I thought I would, considering I ate a cinnamon roll beforehand…I also did a 2-minute and 30-second plank with a few mini breaks because I was dying.

Today: Approximately 20 minutes ago I finished my 35-minute HIIT Tabata Workout but without the core-focused exercises because today is a rest day for my plank challenge, and I’m determined to give my core a break. I woke up at 5am and started working out A.S.A.P. Although I enjoy morning workouts, any hour prior to 7am is disgusting in my book.


Last night was a sad one—our candy corn stash was officially depleted.

I guess this means my addiction is officially put on hold until after Halloween, when I can get candy uber cheap. It’s for the best. It was getting out of control.

As of today, there are 15 days until Halloween, and possibly 9 days until I need to have my costume put together, depending on when we do who-knows-what for it. The pressuuuuure! I guess this means I’ll be spending some quality time in some thrift stores this weekend, trying to put together my costume…

Okay, enough of my inevitable costume stressing that happens every. single. year. Keep reading for some cool randomness I’ve come across over the past week.

These Are a Few of My Favorite Things

Recipe: Roasted Cauliflower and White Cheddar Soup. I was informed by my sister that this cauliflower soup is the business. If my picky eater bro-in-law likes it, then I’m thinking Matt has to like it. Ohhhh those picky eaters. They make cooking healthy meals so difficult.

Description: Delicious, gross, and confusing. I found this on Facebook after one of my friends liked it from the Visa page, I guess? I felt the need to share because it’s one of the best descriptions of candy corn I have ever heard. Mmmm.

Song: MS MR – Hurricane. Not quite sure why, but I’ve been really enjoying this song lately. It’s not the usual upbeat type of song I usually put in these posts, but I figured I’d share anyways.

Dessert: Baked Apples with Oatmeal Streusel Topping. These look like beautiful little desserts that require little effort. I’m all about that combo. Yummmmm.

Recipe Idea: Best Salsa Ever. I love salsa that isn’t chunky. I’ve started to blend store-bought salsa just so I don’t have to pick around the huge chunks. This recipe especially intrigues me because you use canned tomatoes. I’ve never even considered not using fresh tomatoes in salsa. Seems soooo simple! And looks quite tasty, might I add.

All the rain we've been getting has been making my All the rain we've been getting has been making my garden (and therefore me) so happy. 😍 Cucumbers, green peppers, San Marzano tomatoes, and ghost peppers (😳) are all taking off. The green beans and strawberries aren't far behind. 🌱🍓 Pretty thrilled so far with my first in-ground garden. 🙌
