Chocolate Peanut Butter Banana Sandwiches

Ingredients

  • 1 banana cut into slices
  • 1/4 cup smooth peanut butter
  • 1/2 cup chocolate chips melted
  • 1 tsp coconut oil
  • Optional: chopped peanuts for a topping

Instructions

  • Spread a small amount of peanut butter between 2 banana slices. Repeat until there are no slices left. Refrigerate for about 15 minutes to help the peanut butter solidify more. This makes the sandwiches easier to work with.
  • Line a plate or serving board with parchment paper. Set aside
  • In a small microwaveable bowl, add the chocolate chips and coconut oil. Heat for 30 seconds, stir. Heat again at 15-second bursts until melted and smooth.
  • Using a fork, scoop each banana sandwich one at a time into the chocolate mixture, turning until fully coated. Lift and let the excess chocolate run off. Set on parchment paper. Repeat this with every sandwich. Then refrigerate for about 30 minutes.
  • Enjoy cold and keep leftovers in the fridge.
